Week 35 – August 27, 2014 – September 2, 2014

Next I decided to make these Apple Pie Cookies from the Smitten Kitchen blog. At first, I was wondering what I was getting myself into – using a pie crust dough like a ravioli, and encasing apple pieces? I had never even made a pie crust before and have always heard how difficult it is. But I decided to just go with and see what would happen.

Following this recipe made it really easy to make the pie crust! I learned how important it was to keep the dough cool. The recipe stresses that a lot. It never mentioned what to do with the extra dough, after making the first set of discs. To try to not waste the dough, I tried to knead the dough again, after making the first set of discs, so I could make more discs. At that point though, the dough had warmed enough, that the butter got lost. Without the butter chunks, some of the awesome flakiness of the crusts were also lost. It was pretty clear, after baking with cookies, had the good dough versus the warm dough. In the future, I think I would still try to find a way to not waste the dough, but I would spend more time leaving the extra dough in the fridge in hopes I wouldn’t lose so much of the butter.

Overall, these cookies were amazing. I wanted to bring them to work the next day, but ended up eating a large number of them, myself… they were amazing when they were right out of the oven.

My next recipe was this one for Ratatouille Toast with Fried Eggs (again, found on Food & Wine). It took a bit of time to chop up all the veggies. But after that it was pretty straight forward to put together. The crushed red pepper gave it a little spiciness. The olive oil, salt, and pepper, added a little extra flavor. The runny yolk of the fried egg made for an awesome texture with the toasted bread. Overall, it was a tasty dish. :)
